Sourdough Starter - Stirring the starter

This is my first sourdough starter. As far as I can tell it is going really well so far. It started with just flour and water, mixed together and then let to sit in a bowl loosely covered. I’ve been feeding it about twice a day with fresh flour and filtered water. It is now to the point where is doubling in volume within a couple of hours. It has a pleasant sour flavor (tastes like sourdough bread!) and I can’t wait to try making some bread with it.

I thought it should have a name since it is alive and the name Henry came to me. Kristin suggested that it was probably actually Henry Shaw, so we decided that the official name of this starter is "Sir Henry Shaw the Sourdough Starter (the first)". Or Henry for short.
